This is a kind of cheese pie you can find in the rural areas of central Greece and its purpose is to be prepared quickly in contrast to other types of pie.

Ingredients
• A glass of fresh milk (330ml)
• 1 sachet of dried yeast
• 4 eggs
• 5 tablespoons of all-purpose flour
• 4 tablespoons of oat flakes
• 250gr of grated feta cheese
• 1 teaspoon of salt
• 150gr of Myrolion olive oil

Directions

 

Preparation
Preheat the oven to 180 degrees.
Heat the milk and dissolve the yeast in it.
Then, add the oat flakes and let them soak for 10 minutes.
Beat the eggs with olive oil in the mixer.
Add the oats and flour.
Stir until the ingredients are homogenized.
Then drop the grated feta into the mixture
and gently stir with a spoon.
Add some olive oil to the baking pan with a brush
and slowly drop the mixture in it.

Cooking
Bake in the oven for 40’ approximately.
The zymaropita will be ready as soon as it starts turning golden.
After 10’ cut it in pieces and serve.
